2-4 servings

Ingredients

¼ cup coconut flour
½ teaspoon baking powder
Pinch of salt
3 tablespoons coconut oil (plus more for frying)
1 tablespoon raw honey or real maple syrup, or a low-sugar alternative like a berry compote or stevia based syrup
3 large omega 3 free range eggs
⅓ cup almond or coconut milk
½ teaspoon vanilla extract
zest of one large orange

Instructions

Place coconut flour, baking powder, salt, coconut oil, honey, eggs, almond milk, vanilla and orange zest in blender. Blend until smooth.

Heat coconut oil in a large skillet over low to medium heat.
Pour scant ¼ cupfuls of the pancake mix into the skillet and cook until the bottom has turned golden brown.
Flip and cook until golden, about 30 seconds to 1 minute.
Continue until all the batter has been used up.
Add more coconut oil to the skillet as needed.

Serve warm with the topping of your choice! Enjoy!
