Forget the morning OJ and dip into this full flavor tomatillo salsa!

Tomatillos contain 20 percent of the daily recommended Vitamin C! They also contain a healthy amount of magnesium and 13 percent of the daily recommended Vitamin K.

A recently discovered set of naturally occurring phytochemical compounds called withanolides, such as Ixocarpalactone-A, is one of the compounds in tomatillos found not only to be antibacterial, but also a natural cancer fighter.

If you are not sold on this salsa yet, tomatillos have significant levels of dietary fiber, very few calories, and low levels of fat.

Eat generous portions of this tomatillo salsa on your morning scramble or as a healthy snack!

Yield: 1 cup


8 tomatillos, peeled, stewed
2 scallions, halved
1/4 jalapeño, halved, seeded
1/2 garlic clove, peeled
1 teaspoon lime juice
1/2 cup fresh cilantro
1/2 teaspoon salt


1. Place all ingredients into a blender or food processor in the order listed and secure lid.

2. Blend for 15 seconds or just until chopped.

Tip: For best texture and flavor, do not over mix.
