Recipe: Green Herb Salad

Dairy Free, Vegetarian

Ingredients

Salad:
3 tablespoons coriander leaves, picked
4 teaspoons basil leaves, torn
3 tablespoons parsley leaves, very roughly chopped
1 tablespoon picked dill
3 tablespoons mint leaves, torn
4 tablespoons purslane or lambs lettuce, torn
4 tablespoons rocket, torn
6 tablespoons mange tout, finely sliced
4 tablespoons flaked almonds, lightly toasted with ½ a tbsp olive oil
2 tablespoons toasted pumpkin seeds
½ teaspoon nigella seeds
1 tablespoon toasted sesame seeds
½ teaspoon chilli flakes

Dressing:
3 tablespoons olive oil
6 sage leaves
2 tablespoons lemon juice
Salt and black pepper

Preparation

  1. 1.  Toss the salad ingredients together in a large bowl.
  1. 2.  Whisk or shake the dressing ingredients together vigorously.
  1. 3.  Lightly dress the salad and serve immediately.
