Recipe: Carrot Ginger Soup

Ingredients

2 tablespoons of Extra Virgin Olive Oil
1 small onion (chopped)
4 cups of peeled and chopped carrots (4 large carrots)
2 tablespoons of peeled and chopped fresh ginger
1 teaspoon Himalayan Sea Salt
1/4 cup fresh orange juice
6 cups of Vegetable Broth

Preparation

1. In a medium pot, saute the chopped onions in olive oil.

2. Add the carrots, ginger, salt, orange juice and vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for another 20 minutes until carrots are tender.

3. Puree your soup in a blender or food processor until creamy and smooth.

4. Enjoy!
