Fennel Bulbs are full of flavor and rich in fiber. Fennel provides cell protective flavonols and antioxidants and are a great source of potassium as well as small amounts of iron, selenium, calcium and magnesium, manganese and zinc.
This is a healthy crunchy snack that is simple and easy to prepare. Enjoy them warm out of the oven or let them cool and store them in an air tight container.
Each fennel bulb makes one serving.
1 fennel bulb
1 tablespoon organic extra virgin olive oil
sea salt to taste
pinch of cayenne pepper flakes or freshly ground black pepper
Preheat oven 250 F
Line a baking sheet with parchment paper
Remove stalk and leaves from fennel bulbs
Cut fennel bulbs into quarters
Finely slice fennel (each slice should contain a bit of the core to hold it together)
Place slices on a paper towel, place another paper towel on top and press to remove moisture from fennel slices (slices should be as dry as possible)
Toss dry fennel slices in a bowl to coat lightly with olive oil and sea salt to taste
Spread onto baking sheet lined with parchment paper
Squeeze a little fresh lemon juice over the fennel slices
Sprinkle lightly with red paper flakes (optional) or freshly ground black pepper
Bake 30 minutes
Bake another 30 minutes or until well roasted and crispy around the edges
