Vegan, Vegetarian, Gluten Free, Dairy Free
1 tablespoon organic extra virgin olive oil or walnut oil
½ small red onion, finely sliced into half moons
2 cloves fresh garlic, finely minced
2 tablespoons sun dried tomatoes or fresh cherry or roma tomatoes, diced
2 tablespoons red, yellow or green bell pepper, diced
1 tablespoon pitted kalamata olives, sliced
1 (15 ounce) can of white cannellini beans, drained
2 cups of fresh spicy greens, choose from and mix together arugula, radicchio, watercress, endive
Sea salt and fresh ground pepper to taste
1 lemon cut into 4 wedges, seeds removed
1. In a saute pan heat the olive or walnut oil to a medium heat.
2. Add onions, garlic, and tomatoes.
3. Saute until onions are tender and slightly browned.
4. Remove from heat. Let cool.
5. Place drained beans in a bowl.
6. Add onion-garlic-tomato mixture, greens, salt and pepper.
7. Place onto 4 serving plates with a wedge of lemon on the side of each plate.
Optional: Garnish with chopped fresh basil or parsley.
