Nothing says spring like fresh herbs!!

Tarragon adds robust flavor and health benefits to this simple to make vinaigrette recipe.

Rich in phytonutrients and antioxidants, this herb helps prevent disease and improve overall health. 

Compounds in tarragon have been found to inhibit platelet activation, helping to prevent clots from forming in the tiny blood vessels of the heart and brain, protecting the body against heart attack and stroke.

Try this tasty, fresh dressing on salad, as a meat marinade, or coat over steamed, colorful vegetables. The possibilities will have you whipping up a batch again and again!

Vegan, Vegetarian, Gluten Free, Dairy Free

Ingredients

2 tablespoons Dijon mustard
Sea salt and freshly ground black pepper, to taste
1 tablespoon white wine vinegar
2 tablespoons extra virgin olive oil
1 tablespoon cold water
3-4 good sized sprigs of fresh tarragon, lightly chopped

Preparation

1. In a large salad bowl add the mustard, salt and pepper.  Using a small balloon whisk, beat the vinegar into the mustard until completely blended and smooth.

2. Beating continuously, add the olive oil then half the water until completely combined and until the dressing is a thick smooth cream.  Stir in the tarragon.

3. Taste the vinaigrette; if it is too sharp, beat in the rest of water.  Season and let sit for 10-15 minutes before serving.
