Recipe: 4-Step Beet Salad

Beet SaladThis salad is delicious, quick, and an excellent source of potassium and magnesium!

Beets have long been known as a healthy source of important nutrients, many of which are key in fighting and preventing cancer.

This root vegetable is a great source of iron, potassium, phosphorus, calcium, sulfur, magnesium, and iodine. Beets have been shown to reduce inflammation, support your heart, and protect your digestive, brain, and eye health.

You may be surprised: the sunflower seeds in this recipe can actually help control cell damage, thus playing a role in preventing cancer. This is because sunflower seeds are a good source of selenium, which is a proven cancer-fighting warrior. 

Sesame seeds also contain a wide range of essential vitamins and minerals that have been linked to a reduction in the risk of cancer. Beyond the role of these more common minerals, including the powerful anti-carcinogenic effects of magnesium, sesame seeds also contain phytate, an uncommon cancer-preventing compound that functions as an antioxidant and reduces the impact and effects of free radicals.

Dairy Free, Gluten Free, Vegetarian, Vegan


1 large beet
1 cup chopped parsley
1/4 cup raw sunflower seeds
2 tablespoons sesame seeds

For the dressing:
2 tablespoons Dijon mustard
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1/8 teaspoon Himalayan sea salt


1. Peel the entire beet and spiralize it into thin noodles with spiralizer.

2. Mix all the ingredients for the dressing.

3. In a large bowl, mix the beet noodles and the dressing. Massage until the beets start to soften.

4. Add chopped parsley, sesame seeds, and sunflower seeds. Toss and serve.
