Recipe: Gluten Free Vegan Goji Berry Apple Crisp

Here is a twist on an old favorite.

By adding Goji Berries you turn this hard-to-resist apple crisp dessert into a cancer-fighting, heart healthy dish that can promote longevity and fight cancer.

Apples are rich in fiber and pectin as well as quercetin, a potent antioxidant and anticancer plant nutrient found in the skin.

Vegan, Gluten Free, Dairy Free

Serves 4

Ingredients

Filling:

½ cup dried Goji Berries, soaked in filtered water until plump and tender (drain and set aside)
6 cups organic apples (approximately 6-8 small to medium apples), cored and sliced into ½” chunks (keep the peel, it’s full of super antioxidants). Choose crisp varieties, both sweet and tart.
1 teaspoon lemon juice
2 tablespoons honey
1 teaspoon ground cinnamon
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp ground cardamom

Topping:

½ cup almond flour
½ cup gluten free whole oats (or shredded coconut)
¼ teaspoon sea salt
1 teaspoon ground cinnamon
¼ cup pecans or walnuts chopped
¼ cup honey
3 tablespoons unsalted butter or coconut butter

Preparation

1. Preheat oven to 375 degrees F

2. In a medium bowl combine soaked goji berries, sliced apples, 1 teaspoon cinnamon, and ¼ tsp each cloves, nutmeg and cardamom, 2 tablespoons honey and lemon juice.  Toss together until apples are evenly coated.

3. In a separate bowl mix together almond flour, gluten free oats or shredded coconut, salt, 1 teaspoon ground cinnamon, and pecans or walnuts.

4. With a fork, mix in the remaining honey and the unsalted butter or coconut butter until you have a crumbly well mixed consistency.

5. Place apples in a lightly oiled 9-inch glass pie pan or baking dish.

6. Cover evenly with topping.

7. Bake 30-35 minutes or until golden brown. Remove from oven and let sit for 5-10 minutes before serving

Your delectable goji berry apple crisp may be served warm or room temperature.

Store covered in refrigerator in a glass container.

Optional

* Top with vanilla dairy free ice cream or vanilla or plain dairy free yoghurt

* Use Stevia or Xylitol in place of honey (you will need to add 1 tablespoon water)
